Yeastiness in Ungespundetes |

Over a Seidla of Spezial U last evening, Barry brought up the question of just how differently ungespundetes beer is brewed to other lagers. I professed ignorance other than the common knowlege that the lagering/conditioning tank is left "more open" in the case of U, resulting in less buildup of carbonation. Frank added that U's are unfiltered. Barry's point was about yeastiness: is there more yeast left in U than in other beer, as a result of some different fermentation and conditioning? He and Frank said they perceive yeasty flavour in U's such as at Spezial and Mahr's. I, for one, found no yeastiness in the Spezial yesterday, just lovely, lovely hoppiness, and the beer was bright, clear, and clean. (Whether Mahr's is yeasty or not is a question I will leave to those who can choke it down.) Are U's racked into barrels and bottled quicker than other lagers? Barry wondered whether U's are lagered in the primary fermentation vessel, something which I can't imagine being logistically possible: a batch of x000 litres lying in an open fermenter for a month or two. I've actually been on a tour at Mahr's, but I can't recall what the lagering cellar looks like. Anyone? |
