I realize that "craft beer" is a slippery term, but I would guess that all of the beer I drank in Ireland as well as almost all "craft beer" in the US in unpasteurized. Much is also unfiltered or only lightly filtered, which I don't have a problem with unless it is inappropriate for the style of beer. Probably when you ran the pub, all the keg beer was mass produced, pasteurized boring stuff. But I wouldn't call it that today. Cask beer is a great tradition but it is not the only tradition. When I said cask beers were more work -- it's not that there is more physical labor involved, but it, as you said, takes extra care and management. There are a set of skills that need to be learned and the pub has to have somebody around with those skills. |
