Regarding the Fünf-Seidla-Steig - besides the time component of getting there - the best day of the week to do the hike is a Saturday, due to the variable opening days/times of the five pubs. Since your timeframe is Tuesday to Friday, you'll have to factor that in. If you have the time and the option, a better option would be to simply drive down to Weissenohe on a Saturday morning and leave the car parked there at a place where you have booked overnight lodging - there is a small pension in Weissenohe, Lindenbräu has rooms in Gräfenberg, and there are other places scattered about the region. Then you could dedicate the whole of the Saturday to the round-trip hike and enjoy Seidlas at your leisure, stay the Saturday night, and depart on Sunday morning. That said, I'll concur with others here: for the short duration of your planned stay, you'll find plenty in and near Bamberg. Take a local bus out to Memmelsdorf where you'll find not only two brewery-pubs, but you can walk from there up to Merkendorf for two more, and out to Drosendorf for yet another - that makes for five Seidlas in rather close proximity. Or go northwest to Bischberg, Viereth, and Weiher, with brewery-pubs in each town. Or take the bus north to Hallstadt, and walk to the Dillerkeller and the Eichhorn brewery-pub in Dörfleins, then walk up to Kemmern and its Wagner brewery-pub and affiliated Keller. If that isn't enough, take the train south to Forchheim and then a bus or taxi out to the Kellerwald, or get off the train at Buttenheim station, which is a 20-minute walk to Buttenheim proper, where you'll find two brewery-pubs and affiliated Kellers. And this is just a start. Save the Fünf-Seidla-Steig for a time when you can dedicate a leisurely Saturday to it (or to other similar weekend activity).
