OT: A New Pale Ale in Barryia

At present, I'm using malt extracts, probably as a precursor to a full grain mash, so I shouldn't have a problem with unfermentables. Yeast (Danstar Nottingham) was pitched in the current IPA on 24/12/11, which had an OG of 1042. When I checked last night (after 10 days), it had a gravity of around 1015 - too high to safely bottle, I think! I add Coopers carbonation drops (sugar/glucose) when bottling to aid secondary fermentation. Not sure what you mean about rousing the yeast. I brew in a 25 litre sealed plastic bucket with air lock but suppose that I could give it a good shake, if that's what you mean. I have noticed that all my beers change/improve a lot with aging. My original dark ale (Great Expectations) is now really good, a lovely mixture of bitterness and dark malt. Two neighbours sampled it and thought it great, so I had to ration their intake! My Brupak bitter was a bit a disappointment at first, so I hope that it will mature nicely. P.S. This Briton (much nicer than Brit!) is not too concerned about clarity, much more about taste and lack of added CO2 and any other horrible additives. I now get a following morning headache after drinking only 4 cans of Budweiser - what the hell do they put in this stuff?
