Forward planning...Gravity Pour

I was at the Griess Brauereigaststätte a couple of weeks ago and they were gravity pouring the beer. Now that may be because the keller was closed that day due to it being a bit on the cool side and they brought the barrels to the gaststätte? All I know is I went up to the ausschank for my first seidla and they poured it out of a barrel. This might explain why I thought it was so good compared to the last time I visted. I don't believe Sauer pours via gravity at the gaststätte. I was there same day as my visit to Griess and the braunbier was from the bottle and the lager appeared to be CO2 driven.
