Bärlauch Saison

Made a lovely little Bärlauchcremesuppe last night: 1 peeled, chopped Kohlrabi (waves to UJ) and 1 chopped fennel bulb fried until soft, then a bottle of Gutmann (sans Hefe though, to save on bitterness), a half cube of veggie-broth and some pepper to simmer for a while. Then some honey to relieve any bitterness from the Weizen and around 75 gm of chopped Bärlauch, then püréed and refined with cream. (All Bio/Öko/organic, of course! Except the Weizen.) Jürgen, what do you say about whether Bärlauch a modern trend is?
