In my earlier incarnation as a home brewer, my bible was ‘Brewing Beers Like those You Buy’ by the late Dave Line (first published 1978, my 5th edition, 1980 – it was a very popular book). The selection is eclectic but catholic, including a great selection of the real ales of the time, plus some keg brews and also ‘beers of the world’, which ranged from Chimay and Zywiec to Fosters Lager and Budweiser! There are only two milds listed: King and Barnes, OG 1033, which was a dark, malty mild and Morland’s, 1032, which was also a dark mild. There are a couple of light beers, including Mitchell & Butlers Dunkirk Pale Ale (DPA) at 1033, which was often served as a light mild. You might be interested in Dave’s recipe - for 5 gallons and in good old Imperial measurements! 4¼ lbs Crushed pale malt 10 oz Flaked maize (!) 2½ gallons Water 1 teaspoon Irish moss 14 oz Demerara sugar 2 oz Fuggles hops 2 oz Brewer’s yeast ½ oz Gelatine 2 oz Demerara sugar (for priming bottles) [Top up to 5 gallons with water] Sure you would know the method! |
