Barry, I started with an Extract and that failed miserably. My next Beer was all grain and a cpvc manifold in a cooler. It was very good. From then on, I have been making several different styles at a time and this has been a very rewarding experience. The trick in what ever You are doing is to have Persistence and be willing to make a Risk. I bought over 200 dollars in fermenting and brewing Equipment. This was enough to make damn sure the next Batch was going to come out correct. For Me, I have to jump right in. I recommend you to go all grain on your next batch. You have the Passion, now the next step is Education, which everyone is capable of. When hopping your Beers, don't be afraid to try something unconventional. Recipes will tell you to use certain types of Hops with certain types of Beers. Go by the Recipe at first, then if there is something that you don't like, just change it. Hops are an easy thing to be a slave to. The only contradiction that I would make to my previous statement is that you should never overhop a Hefeweizen, as the yeast is the important part in the flavor. Hops are like spices. I doubt that anyone in India devised a formula for the recipes that are so very delicious today. We must try them, different combinations and see whether we like them, in a process that made the foods that we enjoy very tasty to everyone. If you like them and nobody else does, you have a personal victory. If everyone likes your hop choice, it continues being made by more than you. It lives on. Whatever happens, You have a beer that you have made, and that you can be proud of. Also, come to Bamberg and go to Faessla, and Fruct Bar!
