I'm going to be doing a homebrew experiment in a couple of weekends. Basically going to brew two Bocks using the exact same recipe, yeast, fermentation time, temperature, lagering time, etc. One will be triple decoction mashed and one will be step mashed. I'm curious if I will see much of a difference at all. I'm not sure that decoction mashes are harmful to highly modified malt though. Every homebrewed lager I've done the last 4 years I've used decoction mashing and have not seen a detrimental result from it. But we'll see what happens when compared to a step mash version.
