I had Ambros' Festbier he brewed for Sandkerwa a couple of years and it was really, really good. I think Abräusianum suffers from the same problems that many "New Style" brewpubs have: he only has a few fermenters and cannot lager his beers very long and has no margin of error if a batch has a problem (i.e. he can't afford to dump it and be without beer). A brewer with a bigger pipeline will just send the dodgy batch off to Steinfeld and make Bierschnapps :) Also running the restaurant and being the brewer probably means that some days something suffers.
