I brought up Roppelt because someone I know and respect was quite impressed by the Kellerbier on his first visit there last summer, someone who's quite a champion of Real Ale. Who knows, maybe he'll opine here? I don't honestly know how much 3000 hl means, really, and that's also the number I see in my Braun's Brauerei Atlas from 2003, though he may have expanded since then (and I can't find my CAMRA Germany Guide!). No matter though, *all* of it is sold at the Bierkeller or in the Gaststätte when the Keller's closed. (Well, he does have some of it bottled at the Rittmayer bottling plant nearby, but I think that's also filtered.) So the point is, he's only got one outlet at a time, and even so he uses tanks for convenience. Bless him for getting it right though. Anyway, I've often wondered --but never asked anyone-- about bottled Lagerbier at breweries who normally do what might come close to approximating Real Ale. How many are bottle conditioned? Griess comes to mind, as their labels indicate "Hefetrub", and there is indeed sediment in their bottled Keller- and Bockbier. I shall have to enquire. Do you know whether this Hirschbräu do bottle conditioning? I don't think there's a standard for shelf life dating here. I've never been one to be able to taste the differnce between natural and forced carbonation, though of course excess carbonation's pricklyness on the tongue indirectly affects the flavour. And be careful throwing that "additives" word around here--Reinheitsgebot and all that!
