Well Nick, I can't tell you about their bottling process. It's a very small brewery - to the best of my limited knowledge, they have no other outlets than their own pub/restaurant. It seems to me that they simply bottle their non-pasteurised, non-filtered product. There is definitely sediment in the bottle, which I guess helps its longevity. When you flick off the top, it seems that it is still fermenting (even the bottle that I opened the other night, which is well over it's 'best-buy' date). I call this bottle conditioned, do you?
