Help Please -- looking for hotel/brewery in Bamberg

The Altenburglick is pleasant enough (I've stayed there more than once), somewhat similar to a basic modern motel in the USA like a Days Inn or Motel 6. Note that it is farther from the center of town, and the train station, than either Fässla or Spezial, and is more expensive than either of those two places. I agree on the recommendations in Bischberg and Memmelsdorf. A little farther from Bamberg (to the south), but connected by rail service, is the Kraus brewery-restaurant-guest house in Hirschaid, not terribly far from Hirschaid's train station.
