Todd, if you're going to wait for the dollar to "correct," I think it will be a very long time before you wind up in Franconia again. There are ways to budget for a trip like this that will save you even more to keep things affordable. One thing is to punt hotels, particularly if you're staying for a week, and get a vacation apartment (Ferienwohnung) instead. You get good-quality accomodations for significantly less than hotels charge. For that matter, plenty of the Braugasthöfe in the region charge even more reasonable prices than, say, the Drei Kronen in Memmelsdorf. As for gems with visitor-friendly breweries, one place I liked last time around was the Sonne in Bischberg. After ordering and enjoying the house Lagerbier, I found the brewery entry door and opened it (asking for forgiveness instead of permission) and took a quick look around. Brewing was going on, I was invited in, and got a good look at the place and talked with the brewer for a little while. It was a nice little impromptu visit. Other places I've liked include Hartmann in Würgau, with great food and their subtly-smoky Felsenkeller lager, including a new version that uses peated malt. I've also enjoyed heading north up Highway 173 towards Bad Staffelstein, exiting to the country road that goes to Loffeld and Stublang. Loffeld's Staffelberg-Bräu has a good range on, and the beer at Dinkel in Stublang is worth a stop too. Out west in the Steigerwald, the local beers in Mühlendorf, Burgebrach, and Mönchsambach have always gone down a treat, as has the Wernsdörfer house lagerbier in Schönbrunn im Steigerwald. I've also enjoyed the beers at Kundmüller in the wide-spot-in-the-road village of Weiher, southwest of Viereth. Hope your travels go well.
