You might look for a copy of "Fränkische Schweiz: Ein neuer Wanderführer für Biertrinker" by Dietrich Höllhuber and Wolfgang Kaul. The book is a hiker's guide to Franconian beer drinking, but also serves well as a beer drinker's guide to hiking in Franconia. Or maybe it's a book for beer drinkers with a hiking problem. Your Day Out At Aufsess sounds like a winner though, and Kreuzberg + Stiebarlimbach is never a bad choice. You've probably already done something relatively easy (not a lot of distance between towns), like Geisfeld-Merkendorf-Schammelsdorf-Lohndorf-Tiefenellern, perhaps?
