The "Stiebarlimbach Kellers Bus" thread below covers it pretty well. Bus 265 runs from Forchheim Bahnhof through Schlammerdorf & Hallerndorf to Stiebarlimbach, including one stop at Eggolsheim Bahnhof in Neuses on school days. The bus does not run on Sundays. Assuming the weather's nice and the Kellers are all open on Monday, you could take a couple of routes. You could train to Eggolsheim and walk to Br. Witzgall in Schlammersdorf, then take the bus to Hallerndorf and hike up to to the Kreuzberg to the two Kellers open at 11.00, then downhill to Stiebarlimbach, who will either have their Keller or their Gaststätte open (probably the Keller if the weather's nice). From there, take the bus back to Forchheim. Or you could take the bus all the way to Stiebarlimbach and take the route the other way around. Here's a map of the route by foot, I know Gunnar's hiked this route at least once or twice, but he's an avid hiker: http://i26.tinypic.com/34zjdxf.jpg Kreuzberg, unmarked: http://i27.tinypic.com/29mn29d.jpg How to get from the bus at S'limbach to the Keller: http://i32.tinypic.com/sddzyx.jpg And a low-res sample section of my big clickable map linking breweries & Keller around Bamberg with internet links, which I'll send you if you want, email me at erlangernick at yahoo dot de if you're interested. http://i25.tinypic.com/aag0fq.
