Agreed it can happen, but staling through oxidation is a slow process. There is a good graph on this in my brewing bible "Tap into the Art and Science of Brewing" by Charlie Bamforth. Cardboard or staleness comes in about a third of the way along the time graph, but once it is there, it is a rapidly rising feature. Overnight? I doubt it, otherwise there wouldn't be a cask ale on sale anywhere. I agree too that perceptions may vary, even mine and my palate is pretty good for staleness. Without tasting the beer that you showed Hubert, I couldn't say. but it's an interesting discussion though. I've enjoyed it Final point on GBBF. I have seen the odd keg put on after being kept overnight but these are far and away the exception.I'd say they often last two hours max on the bar. In really busy times - less. There are of course, exceptions.I will be looking at this process carefully this year. |
