With all the hysteria over liquids on planes and stuff, I wouldn't look forward explaining what that live biological material was in my suitcase :) I don't if you are in the US or not, but I've tasted some very good homebrews made with various Wyeast and White Labs cultures. I asked a wheat beer brewer once if he had a secrets he would pass on. He really didn't want to say anything, but he did say to watch your pitching and fermentation temperatures. I gathered he pitched the yeast while the wort was warmer than normal and the cooled it after some (unspecified) amount of time. After hearing that, I went back and read Eric Warner's "Wheat Beer" style book and I seem to remember he said something about that as well. If you don't have this book, I would try and get a copy. My guess is than any small brewery that bottles their wheat beer is likely to use the fermentation yeast in the bottle (or maybe "more likely" is better). |
