Welcome JezzaP! But I have to say its about time!
If you don't need a fancy room, Brauerei Spezial is the best place to stay. The rooms are large, but don't have a phone or TV (I consider this a plus, generally). It is family run and friendly. But they only have 7 rooms (and only 3 or 4 of those are doubles) so booking early is best.
The other brewery hotel in Bamberg in across the street at Brauerei Fässla. The rooms are a bit smaller, but have phone and TV.
If you are staying a week or so, you might consider a "Ferienwohnung" or "Vacation Apartment." These are small, fully equipment (i.e. kitchen and utensils) apartments. Many require a min stay of 3 or 4 days. There is no maid service, though. I have stayed in two:
My friend Frank Wetzel (the "beer pope" of Bamberg) has one. His page seems to be down, but if you post (or email me) dates I can get a message to him.
The other is Ferienwohnung Albert (www.urlaubinbamberg.de). Frau Albert has two doubles and a single practically around the corner from Klosterbräu in the old town. Prices are reasonable (as are Frank's)
If you don't have a car, I wouldn't recommend staying outside of Bamberg.
I agree with Jos about Munich, though there are some worthwhile places to visit in the area (Kloster Andechs, Forschungsbrauerei, etc.) But the beer in Bamberg is far superior.
Drop me an email and I can give you some more info...
