Excessive Carbonation

Thanks to Gerhard as usual for a most open and informative contribution. The CO2/N2 mix is more or less the same as used by Guinness. It is a much better solution than straight CO2, although it is not a complete solution as some of the CO2 is absorbed and N2 itself can be absorbed under pressure. However, Gerhard certainly deserves praise for its use. I am not completely clear as to why it is not possible for German breweries to simply fill casks from the lagering tank with beer and for it to be dispensed either BA or by using some kind of pump. In the absence of other explanation, I assume that it is down to economics in that, presumably, it is possible to maintain beer in servable condition for a longer period by replacing dispensed beer in the cask with CO2.

I'm also not sure why Gerhard says for 'brewpubs with a small menu of beers and a great demand it isn't necessary to use a mix gas, which is more expensive (around 50%)'. Is the assumption that high turnover means less time for CO2 absorption?

I'm also puzzled as to why it is necessary to employ a commercial service to clean the lines? Sorry to hark back to the dim and distant days of my pub running but it was always practice for the pub owner/manager to clean the lines once a week. I was serving 4 real ales and 4 keg products (2 lagers, Guinness and cider) and had a line run of around 10 metres. It was my Wednesday morning chore and took me about 1 1/2 hours.
