In some other place "Bierkulinarium" or "Bier-Kulinarium" means a dinner with 5 courses and a different suitable beer for each course. P.e. http://www.gut-riedelsbach.de/bier-kulinarium-bayern.html Burkhard Michel, the former owner and cook of the Mahrsbräukeller at the Stephansberg (now closed) has offered Bierkulinarien with 5 courses, all cooked with beer, and a suitable beer for each course. Normaly Beer & Food pairing doesn't mean, that the dishes are cooked with beer. He has helped the Zoiglstube and his friends Manuela and Andy Gänstaller to plan the so-called "Bierkulinarium" in the Zoiglstube. (5 dishes including beers for 48,00 €, for groups, not on the regular menu for individual guests). The difference to other Bierkulinarien is, that the Zoiglstube cooks all dishes with beer as an ingredient. Maybe you can translate "Beer & Food Pairing" with "Bierbegleitung". "Weinbegleitung" is a word for dinners with suitable wines, where the price includes the wines (with a limited volume of the wine, p.e. one small glas per dish). But in many places the authors write "Beer and Food Pairing" also in German articles as an established techninal term, p.e. http://www.legourmand.de/2012/09/12/beer-and-food-pairing-warum-bier-ein-perfekter-begleiter-durch-ein-edles-menu-sein-kann/ Schlenkerla offers for groups (20 guests and more) also a Beer & Food Pairing with 3 or 4 courses, with dishes cooked with beer. The last cours are pralines with beer as an ingredient, made from the Confisserie Storath.
