Family-owned Franconian bakeries?

Yes, Jeff, this is what I thought. You will find that bakeries in general, and good bakeries in particular will usually sell out of bread and other products by about noon. Don't forget they open very early. A bakery near my house, for example, opens at 07:00. In western Germany, it is usually possible to buy a jelly doughnut (called a Berliner in Germany) until at least the afternoon. But, I'm not sure they are so common in Bavaria. Perhaps Nick has some experience. Again, looking for a konditorei will almost guarantee you can find something sweet all day long.
