Don't think anyone really answered your question re the Vesta Castle in Coburg. It's a long, steep but exceedingly pleasant walk up from the town centre and the views are fabulous. Definitely worth doing if you have time. If you can really spare the time away from pubs and breweries, the Puppenmuseum (Doll/toy museum) in the Altstadt is worth a visit. I was persuaded to visit it by my wife and found it most entertaining, plus the owner is a most charming and helpful man. About Vierzenheiligen, I am in two minds: again, the short trip up from the town is very pleasant and the interior of the church is outstanding. But it is a very commercialised experience (loads of stalls selling religious knick-knacks) and, on my visit, excessively crowded. Unless you are of a particularly religious persuasion, I'd reserve my church going to the Dom in Bamberg, which is a really impressive experience, both externally and internally, as are several of the other churches in Bamberg. On the other hand, you may wish to reserve your time in Bamberg for more serious activities!
