I just wish we'd stop calling it "top" or "bottom" fermenting. It's not like ale yeast doesn't also settle to the bottom of the fermenting vessel! (At least, every single ale yeast I've used has.) (Also, note the amazingly intelligent, informative, and helpful follow-up comment!)
