The fact, that too much "gas" can spoil the beer is known already a long time. Therefore, for example, in Prague You can find a lot of "tankovná" pubs: the beer is in 5 or 10hl steel tanks, but sheltered by sterilized polyprophylene bags, so that the liquid has no contact with the air; compressed air squeezes the bag and makes the beer go to the taps. No CO2! The result is a smoother and more complex Pilsner Urquell! But the best way to serve a beer is always from the wooden cask, only by gravity - like in the Duesseldorf nrew-houses… |
