First timer? Doing basically a single overnight stay?

You don't really need a tour guide. Bamberg is compact and walkable. Better is to hit the tourist information office and pick up some useful info that is geared towards the beer tourist. And, maybe, to know which ones are really essential (*cough* Ambräusianum *cough*).
