The "Kölsch Konvention" http://www.koelner-brauerei-verband.de/k%C3%B6lsch-konvention defines Kölsch as a beer - pale - top fermented - "blank" (clear) - "hopfenbetont" (hoppy) - highly fermented The "Kölsch Konvention" is a contract between the breweries in Cologne, of the communities of breweries in Cologne. In Germany you need for such competition restricting agreements a leave of the "Bundeskartellamt" (cartel office). It is also a protected geographical designation.
