...the late hop additions and use a proper ale yeast like Nottingham or Chico, I should have written. Or an Altbier yeast. Why crush the weak, delicate aroma hops under bananas and cloves, especially when you say you're going to highlight the hops? Possible answer: Because you know your customer wouldn't REALLY like a truly hoppy beer. |
