Actually, you'll probably not need the AST service for Hallstadt, since train service runs well into the evening. The last local train departs from Bamberg about a quarter-hour past midnight. (Do Fässla or Spezial keep train schedules on the wall in the men's loo, like Früh does in Köln?) Otherwise, you take bus line 904 to the last stop (if after 8pm); before you board the bus, you call the AST/ALT number and request a taxi to pick you up at Coburger Strasse at whatever approximate time the bus gets there. After the taxi picks you up, it's about four minutes (maybe) to Hallstadt. If you're stuck walking the last bit, it's about 1.5 km or so.
