OT: Amberg and its environs

I'm flying in to Munich airport in June. So I have decided to stay the first couple of nights in Amberg. I've been to Amberg before. But the town has a Pfingstdult on in June, which might be work checking out. Any other recommendations in this area of Bavaria? Note that I have been to Sulzbach-Rosenberg and Regensberg already. A trip up to zoigl land might be worth a look. But are the communal pubs open on a Wednesday? It's a long way to go if everything is shut up.
