"Wirsing" means "savoy cabbage," period, and the only likely variation might be the mildly redundant "Wirsingkohl." "Spinat" is "spinach," period. The base word "Kohl" means "cabbage," but as you've seen, "Kraut" also stands in for cabbage, fermented or not. There's also white cabbage - "Weisskohl" - that in some bits of the Rheinland is also called "Kappes,"
