Kellerbier is, above all, lager beer which has been lagered in a Bierkeller. Ideally, it should also be served at the Keller in question, as traditionally as possible (bayerischer Anstich). Beyond that, it's whatever the brewer wants it to be, I suppose. The best ones, of course, are pale, hoppy, and dry, as you know, and served without CO2. |
