What is Kellerbier?

Can we have the complete lesson please? Re Kellerbier: it seems to my relative ignorance a none defining term but simply something used by brauerei to describe their standard 'cooking' beer, particularly used by those brauerei that have keller. As far as I can see, none of the Bamberg brauerei uses the term (it does crop in the Wilde Rose), so why describe U as Mahrs' kellerbier? And sorry, Nick, disagree, I think U is totally distinctive, apart from Schlenkerla Marzen, to me, by far the most interesting beer vom Fass served in Bamberg's brauerei (though I do like Spezial Rauchbier and Herren pils; would like Fassla beers more but they are always over carbonated with added CO2; Greifenklau, IMHO, very modest; Klosterbrau braunbier nice-ish but expensive and terrible service) . The only actual Kellerbier that I can recall drinking last September was in Eichorn, Dorfleins. Difficult to comment on the colour, as it comes in a ceramic mug (and I'm really a drinker rather than a note taker) but it seemed brownish, not too different from U in colour. Tasted ok but, IMHO, was a bit thin. I actually ended up drinking the pils, which seemed much more flavoursome. Unusual for me, as I prefer darker beers.
