This 'logic' seems a little torturous to me. In essence, you are saying that 'kellerbier' and 'U' are simply interchangeable terms and, therefore, all kellerbiers must be lagered unbunged. But you qualify your statement by saying 'most' and 'probably' and, as Don points out, there is no common thread to kellerbier, other than the name and the implication of drinking in kellers. Sure, you could call 'U' Mahrs' kellerbier but what would that mean? Nothing, I think. Michael Jackson says this about U and Kellerbier (and Zwickel): ...the unfiltered style of lager that is variously known as Zwickelbier, Kellerbier or Ungespundet beer. Each term has a slightly different meaning. "Zwickel" implies simply that the beer was taken from a small tap on the maturation tank; this version tends to be especially hazy. Kellerbier has sometimes has an especially heavy dose of hops, to act as a preservative. The third term means "unbunged," indicating that the maturation was in a vessel open to the atmsphere (ie not controlled by a pressure valve). This makes for a lesser carbonation. With a diminished gassiness, there is less carbonic "bite" on he tongue, so the drinker is more sensitive to the flavours in the beer. The latter is probably the reason that I like U so much! |
