Though decoction mashing still exists there is really very little need for it. Decoction mashing was utilized to deal with poor or undermodifed malt. There really isn't that much undermodified malt out there these days. As a matter of fact Weyermann now sells a 'undermodified malt' as a specialty malt for those who want to go through this rather rigorous process. Also, decoction mashes are not good for malt that is highly modified. The maltster has taken care of the need to decoct. ToddA |
