You could try Münster, for Pinkus Müller. Einbeck, for Einbecker - the town's wooden architecture is fantastic. I'm not sure, however, that either of these would give you the varied beer experience that a long-distance traveller would probably want. Think about staying in Amsterdam instead, for 't IJ brewery and the Prael brewery, plus an embarrassment of riches in terms of specialty beer bars - In de Wildeman, 't Arendsnest, the Beer Temple, Café Gollem, and specialty beer shops - De Bierkoning and the Cracked Kettle - all within 15 or 20 minutes walk from each other, and you can try a hell of a lot of different beers at each one. In Cologne, make sure you go to Lommi's in the Siegesstrasse.
