Upper Bavarian Visit in September, Towns, Festivals...?

Hello, I will be visiting Franconia in September with my cousins. We will be flying into Nurnburg then going to Oberaislfeld to visit relatives & drink Held Brau. My question is about where to go during the rest of our trip. We are thinking of going to Prague and Bamberg. Any other smaller towns come up? We have been to Rotenburg. Also, are there any monastaries in Franconia that are interesting and make beer? Thanks!
