Extract versus full mash

Yes, zoigl wort is made from an all grain mash.

Discussing this with Robert, he explained that the process of making a malt extract is much the same as making a wort. The only real difference is that the wort is then dehrydated, thus the extract is essentally a concentrated wort. I'm not a chemist so I don't know what effect dehyrating has, that is, whether it changes the essential quality of the wort but I don't really see why it should. 

To take this a little stage further, many home brew kits contain a malt extract that has also been hopped before dehydrating, which is much the same process that occurs in zoigl land.

It was interesting talking with Gernot last Saturday night. He is not a trained brewer and said that it was no longer necessary by law in Germany to have a braumeister qualification to make and sell beer to the general public. He was of the view (correct me if I'm wrong, Gernot) that making beer is like cooking: it's something anyone can do. The main differences between a chef and a domestic cook are the scale of operation and maintaining consistency, which is much the same as commercial brewing/home brewing.

Undoubtedly, the quality of malt extracts is much better today and the range available is far greater than it used to be. Woodforde, for example, sell a kit to make their Wherry beer that uses malt extract and they claim that it is essentially the same as their draught Wherry. I've made it and it's pretty good - I can't say how close it is to their commercial product because of the time gap in tasting both.
