Franconian Beer Message Board

"You absolutely can not cook with beer."

So says the chef (Engl: Küchenchef) at Landgasthof Fiedler < http://www.landgasthof-fiedler.de/ > (beware -- loud music!), where Franconia's first officially certified beersommeliere (female) conducts beer/food pairings. Video of a recent tasting, with the chef explaining his bizarre opinion is about 1'30", is at < http://tinyurl.com/aqqebp3 >. "We're not really cooking dishes with beer, since you absolutely can't cook with beer, as it simply doesn't give any flavour." He goes on to say that he uses the ingredients in beer, malt and hops, in various dishes to give flavours that remind you of beer. I've wanted to go to one of their beer dinners, but now, I'm not so sure. They also seem to use some of the new, hyper-overpriced "hey, it's German, so this basic pale ale should cost 18€ a litre" sort of beer that cause me to fall asleep. The food's probably pretty good though. I've also thought of the idea of getting Biersommelier training myself, but the price...2500€? Hilarious! I suppose I *could* then make money with it though.
