Family-owned Franconian bakeries?

Wow, extremely helpful post, Gerhard. I appreciate this so much! I'm mostly after post-breakfast pastry, to fill in the gaps, ya know, from the cold cuts that I am unaccustomed to eating. And something sweet for a midday munchie is always enjoyable. So, probably not so much focus on brot. Many of these places look quite interesting and are precisely what I am after, so looks like I have my work cut out for me (in a terrific way!). My friend and I will be travelling from Colorado to Franken, arriving on the 8th and leaving on the 18th. We wil be spending five nights in Bamberg and will come say hello when we visit your wonderful Abseits.
