OT: A New Pale Ale in Bavaria

This seems something very novel, a top fermented beer in Bayern. The web blurb seems to intimate that it's bottle conditioned - can this really be true? My own IPA seems to be coming on fine. Had a sneak preview when I tested for bottling (still at 1015, so a bit lively yet) and it was mighty hoppy, much more so than anything I've brewed before. I think it will be good but J. pulled the face that she puts on when she drink gueuze! Incidentally, it seems to take a longish time (14 days ish) to get my brews down to bottling levels. I use a brew belt, so the bucket temperatures are maintained at a steady 20 - 22 degrees C. Any ideas anyone?
