Jurgen, as to the colour with that formulation,using presumably all Weyermann products? you will achieve over 200 EBC,bearing in mind that a typical Irish stout is around 130 EBC. My own personal opinion would be that it may be a bit heavy on the roasted malt.And could have a slight stout type taste to it.But you may be happy with that of course. What is the Alpha content of the Herkules kettle hops? as this will have an impact on the effect that the 12% caramel malt produces in the final flavour profile. Have you thought of using a percentage of Weyermanns sinmar to replace some of the roasted malt? I |
