When I was thinking about setting up a brewery, long before the recent 'revival', c.1980, myself and my brewer friend were talking about making one from second ex-catering industry bits and pieces. I suppose a bit like the sort of things that most home brewers do but on a bigger scale. If I was starting a micro today, I'd still do something like that -you can always scale up or reinvest if things start to go well. Of course, another route that some have chosen is to use someone else's brewery to start things off. That also seems like a good idea.
As for wood covered tuns, don't really know but suppose that it is a form of insulation. Andy?
When I worked in the power generation business, I was amazed by the efforts that the industry made to conserve even the smallest amount of heat. A big percentage of generation plant is devoted to conserving and re-using heat. I suppose that the capital cost of equipment is more than balanced by operational savings.
