Ah, yes, we've posted about him here before, I think. I'm still surprised that with all that serious hardware, that he uses plastic...hopefully only for sanitation, no actual beer goes in it. And looking at his website, he describes the brewing process at great length. Interesting to me is his section on bottling. Like me, he cleans his bottles by rinsing well (I also brush them out when necessary) and sanitiszes them by baking them in the oven. But...150° is ridiculously hot! I do 65 or so, and have never had an infected bottle. I also don't remove the rubber bit from the swing-top, but I suppose 65° isn't too hot for such rubber. Also, he brews 80 L batches with a 100 L Maischbottich. If he were to reduce his batch size somewhat, he could forego the labour-intensive, quality-jeopardising sparging (Anschwänzen) operation entirely, improving the maltiness of his beer. Of course, at the cost of 15 - 20% more malt per batch, but isn't quality (and saving an hour on brew day) worth it? Or even with the same setup, make a stronger mash and add water to the kettle, without sparging. I don't understand why any homebrewer sparges. |
