I took German in high school -- did just enough to get a B and sort of forgot most of it. At about age 40 or so I traveled to German for the first time. Basic stuff came back (read a menu, etc) but very little conversational skill. At about 50 I took a course at Treffpunkt. Had fun, but basically was a waste as the people I was with (my father and a friend who was a total beginner) spoke English after class. Went back by myself a year later and told Frank Wetzel that he was not to speak to me in English unless I was in danger. Improved greatly. The key to the immersion part is to immerse. I don't think you can do it (above a certain age) by a couple hours a day. Self study can help with vocabulary and some grammer and listening helps with comprehension, etc. If you spent your month in EschWo speaking only German you would improve quite a bit.
