He seems to use a lot of Wyeast liquid yeasts in his brews. Has anyone tried asking a Franconian brewer for some yeast slurry? You would need the correct strain for an accurate style. I think all the South German brews use a Weihenstephan yeast strain. I find yeast much more interesting than the current vogue for hops :) |
