Excessive Carbonation

I am so sorry, I have never compared consciously the quality of the Keesmann Pils in the Keesmann brewpub and in the Café Abseits.

In the Café Abseits we use not CO2 but a mix of CO2 and Nitrogen N2, p.e. the brand Aligal Nr. 13 - from Air Liquide.

The advantage is that the beer doesn't carbonized. So it is possible to tap the same KEG a longer time (p.e.  if we tap beer specialities with a small demand). The alternative are smaller KEGs. So Schneider offers 20 l-KEGS and also Weyermann has different volumes of small KEGs. The Häffner Bräu plans to offer 10 and 20 L.KEGs for their Hopfernstopfer Craft beers, p.e. Hopfenstopfer Citra Ale.

Some experts, p.e. the brewery Erdinge recommend Aligal Nr. 13 or a similiar product.

But for brewpubs with a small menu of beers and a great demand it isn't necessary to use a mix gas, which is more expensive (around 50%). And they should have personell who can clean their lines professinally.

The Café Abseits has not  an own special cleaning procedure. A commercial service comes and cleans the lines chemically and mechanically. Costs: near 3.000 Euro per year.

One problem of the quality of beer in Germany is, that the official control (food hygiiene of the cities) only control the books (when has been the last cleaning), but not the real quality of the beer tapped. Only in rare cases they let control the quality in a laboratory, p.e. if the pub has not cleaned their lines over many months or hasn't write down the dates of cleaning. They focus on dangerous food, not on bad beers.
