You forgot lamb, and the most common form of mammalian protein consumed in much of the world is goat. In some societies, horses and oxen are very much work animals; the logic of eating them is akin to eating a tractor in the energy-intensive "first" world.
And yes, there are emotive and anthropomorphic factors involved too. Cute little bunnies and doggies? Anathema to many. Not even a consideration for others. Or the flip side: fried mealworms? Big ick factor to many. Tasty snack to others.
