How long are you staying over for? I was never quite sure that I actually knew what decoction was, so I spent part of the afternoon watching some videos on YT of a guy called the Braukaiser demonstrating on a home view. He was working behind a windshield in the open air, with snow on the ground, so I thought of you two! What really amazed me is that he didn't scald himself as he jugged boiling liquor from vessel to vessel. Think I understand the principle now and, if I'am not mistaken, this is what happens in Eschawo and Neuhaus. Although I have spent a bit of time in both brewhouses, I've not watched the process from start to finish and my limited German made it a bit tricky. However, the process involves swapping parts of the mash between tuns, so I guess decoction is what they are at. Hopefully, will get to see the process again in May/June and may have an interpreter on hand! |
