Well, that's not so outlandish. Although Eschawo is exclusively 'zoigl', it's a term that can mean a lot of different things to a lot of different people. For example, Neuhaus brewers use mainly pilsner malt, while Windisch brewers use a pilsner/munchener mix, with Rudi Loistl favouring a 50/50 split that results in a reddish brew. I doubt whether we are likely to see a topo fermented ale at any time in the future, but the little Weyermann brewery showed that bottom fermentation can produce a very drinkable and hoppy IPA. |
